Water Activity Test
Measures the amount of water in a product that is available for biological reactions, such as microbial growth. It's calculated by comparing the vapor pressure of a product to the vapor pressure of pure water at the same temperature. The results are presented on a scale of 0–1, where 0 indicates no free water and 1 indicates all water is available.
The sample size is a minimum of 25 grams.
